Ingredients:
65g unsweetened cocoa powder (I used half M&S Fairtrade, half Cadbury's)
2g baking soda
80ml melted butter
400g white sugar
120ml hot water
165g plain flour
2 eggs
a handful of walnuts, chopped
a handful of glacé cherries, chopped
a handful of raisins
1 tbsp rum (any kind will do!)
1 tsp vanilla extract
pinch of salt
STEPS:
1. Pre-heat your oven to 180°C, and grease a 9x13 baking tin.
2. In a large bowl, stir the baking soda and cocoa powder together (no need to sieve.)
3. Add the melted butter and boiling water to the mixture, and blend well. I usually melt the butter in the microwave. This works well once you ensure that you don't burn it!)
4. Now add the flour, vanilla, rum and salt to the mixture, and mix until all the flour is well absorbed.
5. Lastly, stir the chopped walnuts, cherries and raisins through the mixture until evenly distributed.
6. Spread the brownie mixture evenly into the tin.
7. Bake in the preheated oven for about 40 minutes, or until you can stick a knife into the centre and have the blade be clean when you take it back out.
8. Allow the brownies to cool before cutting them into squares and carefully lifting them out of the tin.
9. Sprinkle icing sugar over the top, and serve with cream or ice cream.
Unfortunately I haven't got a picture of the ones I made, but here is one I found which looks quite like them!
